An artist and lover of sandwiches, Lesley Byrne tenderly pores over every last one and glows over them as if with maternal pride. A tried-and-true medley of salmon, tuna and egg salad populates her boxes and doily-dressed trays, often teamed with cream cheese and cucumber, smoked salmon and maraschino cherry pinwheels. Byrne's tidy crust-free creations travel to tea parties, bridge games and boardrooms, and are especially loved by self-conscious cocktail-sipping types concerned with nibbling, preserving lipstick and not looking piggish. The prettiest in Byrne's photogenic family are her rainbow pinwheels, swirled with egg, tuna and salmon (an olive serves as the salty axle). Kids go gaga over the peanut butter and banana versions.
